I'm putting circulating pumps back on my engines and I'm thinking of buying the the low flat style stainless steel t-stat housings from Diamond Performance #18-1989. Does anyone know if you have to run the 3/4" bypass hose from the top of the water pump to the front of the intake? I looked at the Merc parts listings for the 500hp's 540 Bulldog's and some others and it seems like some have them and some don't. Has anyone used this style t-stat housing before and would this be the best one to run or would the stock style Merc one be better? Any help would be appreciated

You should be fine with that T-stat housing. You can go either way with that bypass hose. Not really needed. I believe that hose is mainly used in cars, so the coolant can still circulate somewhat without going thru the radiator. I dont see a need for it on a boat. Your bypass would be acheived thru the connection of the circulating pump and that style t-stat housing.
